palpayasam is rich ,creamy and tastes heavenly.

Milk - 4 cups

Water - 3 cups

Rice - ⅔ cups (i used the red rice)

Sugar - 1 cup

Cardamom - 2,3 pods crushed

Cashewnuts - 10 (toasted in ghee)


1Mix water and milk, cook in medium heat till the volume reduces to half.

2Wash and drain rice, add it to the cooked milk, cook under medium heat till rice is done.

3Add sugar, cook for 20 more minutes with frequent stirring.

4Add crushed cardamom.

5Remove from stove.

6Cashew nuts toasted in ghee can be added.

you can use pressure cooker just to speed up the process and save time and energy.
The whole process has to be done on low heat.
It is that which makes the palpayasam delicious.
You can use the special Kerala red rice also for making this palpayasam.
This palpayasam does not need raisins or nuts as the taste and flavor of the milk itself is divine.
